Ingredients
- 1.5 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 2 tablespoon olive oil
- 4 clove garlic (minced)
- 1 red bell pepper (thinly sliced)
- 2 teaspoon dried Italian seasoning
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 cup chicken broth (nut-free, soy-free)
- 1 pound dry pasta
- 4 ounce fresh spinach
- 0.25 cup fresh parsley (chopped)
- 5 ounce mixed green salad
- 2 tablespoon Italian dressing (nut-free, soy-free)
Instructions
- Cook the dry pasta according to package directions. Before draining, reserve 1/2 cup of pasta water, then drain the pasta.
- While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breast pieces and cook until browned and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
- Add the minced garlic and thinly sliced red bell pepper to the same skillet. Sauté for 3-4 minutes until the pepper is tender-crisp.
- Stir in the dried Italian seasoning, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Pour in the chicken broth and bring to a simmer.
- Return the cooked chicken to the skillet. Add the cooked pasta, fresh spinach, and chopped fresh parsley. Toss everything together, adding a splash of the reserved pasta water if the sauce is too thick, until the spinach wilts and the pasta is well coated.
- Serve the Garlic Herb Chicken Pasta immediately with a side salad of mixed greens tossed with Italian dressing.
Notes
Look for a pasta shape like penne or rotini that holds sauce well. Adjust the amount of chicken broth or reserved pasta water to achieve your desired sauce consistency.
