Garlic Herb Chicken Pasta

  1. Cook the dry pasta according to package directions. Before draining, reserve 1/2 cup of pasta water, then drain the pasta.
  2. While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breast pieces and cook until browned and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
  3. Add the minced garlic and thinly sliced red bell pepper to the same skillet. Sauté for 3-4 minutes until the pepper is tender-crisp.
  4. Stir in the dried Italian seasoning, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Pour in the chicken broth and bring to a simmer.
  5. Return the cooked chicken to the skillet. Add the cooked pasta, fresh spinach, and chopped fresh parsley. Toss everything together, adding a splash of the reserved pasta water if the sauce is too thick, until the spinach wilts and the pasta is well coated.
  6. Serve the Garlic Herb Chicken Pasta immediately with a side salad of mixed greens tossed with Italian dressing.

Notes

Look for a pasta shape like penne or rotini that holds sauce well. Adjust the amount of chicken broth or reserved pasta water to achieve your desired sauce consistency.
