  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of chicken breast pieces, season with salt and black pepper, and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  2. Add 1/2 of a chopped yellow onion and 1 chopped red bell pepper to the skillet. Sauté until vegetables are tender-crisp, about 4-5 minutes.
  3. Stir in 2 minced cloves of garlic, 1 teaspoon of dried oregano, and 1/2 teaspoon of dried thyme. Cook for 1 minute until fragrant.
  4. Pour in 1 1/2 cups of chicken broth and bring to a simmer. Stir in 1 cup of quick-cooking couscous. Cover and remove from heat, letting it stand for 5 minutes or until liquid is absorbed and couscous is fluffy.
  5. Fluff the couscous with a fork. Stir in the cooked chicken pieces and 1/2 cup of fresh parsley. Taste and adjust seasoning with additional salt and black pepper if needed.
  6. Serve immediately.

Notes

Ensure you use quick-cooking couscous for this recipe to keep the cooking time within the 30-minute limit. You can add a squeeze of lemon juice at the end for extra brightness.
