Ingredients
- 2 salmon fillets (6-ounce, skin on or off)
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 2 clove garlic (minced)
- 1 teaspoon dried dill
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 1 head broccoli (small, cut into small florets)
- 1 tablespoon lemon juice (freshly squeezed)
- 1 tablespoon fresh parsley (chopped)
Instructions
- Preheat oven to 400°F (200°C). On a small baking sheet, toss the broccoli florets with 1/2 tablespoon olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Roast for 12-15 minutes, until tender-crisp.
- Pat the salmon fillets dry with paper towels. Season both sides with 1/4 teaspoon salt and the remaining 1/8 teaspoon black pepper.
- In a medium skillet, melt the butter with the remaining 1/2 tablespoon olive oil over medium heat. Add the minced garlic and dried dill, stirring for 30 seconds until fragrant.
- Increase heat to medium-high. Place the salmon fillets skin-side down (if applicable) in the skillet. Cook for 4-5 minutes, until the skin is crispy and golden brown. Flip the salmon and cook for another 3-4 minutes, or until cooked through and flaky.
- Remove the skillet from heat. Drizzle the salmon with fresh lemon juice. Garnish with chopped fresh parsley, if desired.
- Serve the garlic herb butter salmon immediately alongside the roasted broccoli.
Notes
Ensure your salmon is patted very dry before seasoning and searing for the best crispy skin. Be careful not to overcrowd the pan.
