Ingredients
- 1 tablespoon olive oil
- 4 ounce ground beef (90/10 or leaner)
- 1 zucchini (chopped)
- 0.25 yellow onion (finely diced)
- 1 clove garlic (minced)
- 0.5 teaspoon dried oregano
- 0.5 teaspoon dried basil
- 0.25 teaspoon black pepper
Instructions
- Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the lean ground beef and cook, breaking it apart, until browned, about 5-7 minutes.
- Drain any excess fat from the beef. Add the chopped zucchini, finely diced yellow onion, and minced garlic to the skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender.
- Stir in the dried oregano, dried basil, and black pepper. Cook for 1 minute more, ensuring spices are fragrant.
- Serve immediately.
Notes
You can use other non-starchy vegetables like bell peppers or green beans instead of zucchini.
