  1. Place the 1 1/2 pounds diced sweet potatoes in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until very tender. Drain thoroughly and mash with a fork until smooth.
  2. While sweet potatoes cook, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the 1 pound lean ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
  3. Add the 1 yellow onion and 3 cloves garlic to the skillet with the beef. Cook until onion softens, about 5 minutes.
  4. Stir in the 1 teaspoon dried parsley, 1/2 teaspoon dried thyme, and 1/2 teaspoon black pepper. Cook for 1 minute more.
  5. Steam the 12 ounces fresh green beans in a steamer basket over boiling water for 5-7 minutes, or until tender-crisp.
  6. Serve the garlic herb beef immediately with the mashed sweet potatoes and steamed green beans.

Notes

To save time, sweet potatoes can be boiled ahead of time and reheated gently before mashing. Leftovers are great for lunch the next day.
