Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a medium bowl, toss the sweet potato fries with 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Spread them in a single layer on one half of the prepared baking sheet.
- Bake the sweet potato fries for 15 minutes while you prepare the fish.
- In a small bowl, whisk together 2 tablespoons olive oil, minced garlic, 1 tablespoon fresh parsley, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Pat the cod fillets dry with paper towels. Place them on the other half of the baking sheet, beside the sweet potato fries. Spoon or brush the garlic-herb mixture evenly over the top of each fillet.
- Return the baking sheet to the oven and bake for another 10-15 minutes, or until the fish is opaque throughout and flakes easily with a fork. Cooking time may vary based on fish thickness.
- While the fish and fries are baking, steam the green beans. Place the green beans in a steamer basket over boiling water and cook for 5-7 minutes, until tender-crisp.
- Serve the garlic herb baked cod with sweet potato fries and steamed green beans immediately, with lemon wedges for squeezing over the fish.
Notes
Ensure sweet potato fries are spread in a single layer to get crispy. If overcrowding the pan, use two baking sheets.
