Ingredients
- 1 pound sirloin steak (thinly sliced against the grain)
- 2 tablespoon olive oil
- 1 red bell pepper (large, thinly sliced)
- 1 head broccoli (cut into small florets)
- 4 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 0.25 cup soy sauce (low sodium preferred)
- 2 tablespoon honey
- 1 tablespoon cornstarch
- 2 cup white rice (cooked)
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper (ground)
Instructions
- In a small bowl, whisk together the soy sauce, honey or agave nectar, and cornstarch. Set aside.
- Season the thinly sliced sirloin steak with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the steak in a single layer and sear for 2-3 minutes per side until browned. Remove the steak from the skillet and set aside.
- Add the remaining 1 tablespoon of olive oil to the skillet. Add the red bell pepper and broccoli florets, stir-fry for 3-4 minutes until tender-crisp.
- Add the minced garlic and grated fresh ginger to the vegetables and stir-fry for 1 minute until fragrant.
- Return the cooked steak to the skillet with the vegetables. Pour in the prepared sauce mixture and stir constantly for 1-2 minutes until the sauce has thickened and coats the beef and vegetables.
- Serve immediately over cooked white rice.
Notes
To further speed up this recipe, look for pre-cut stir-fry beef strips and pre-cut broccoli florets. Leftovers can be reheated in a microwave or skillet.
