  1. Cook the white rice: Combine 1 cup white rice and 2 cups water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Fluff with a fork and set aside.
  2. In a small bowl, whisk together soy sauce, cornstarch, brown sugar, and chicken broth. Set aside.
  3. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add chicken breast pieces and cook until lightly browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  4. Add minced garlic, grated fresh ginger, thinly sliced red bell pepper, and frozen stir-fry vegetable mix to the same skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  5. Return chicken to the skillet. Give the prepared sauce a quick whisk, then pour it over the chicken and vegetables. Cook, stirring, for 1-2 minutes until the sauce thickens and coats everything.
  6. Serve immediately over the cooked white rice.

Notes

You can customize the vegetables based on what you have on hand. Feel free to add a dash of sesame oil at the end for extra flavor.
