- 1 tablespoon vegetable oil
- 1 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 1 cup white rice (uncooked)
- 2 cup water
- 1 teaspoon garlic (minced)

- 1 red bell pepper (medium, thinly sliced)
- 1 cup stir-fry vegetable mix (frozen)
- 2 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon brown sugar
- 0.25 cup chicken broth
Instructions
- Cook the white rice: Combine 1 cup white rice and 2 cups water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Fluff with a fork and set aside.
- In a small bowl, whisk together soy sauce, cornstarch, brown sugar, and chicken broth. Set aside.
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add chicken breast pieces and cook until lightly browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add minced garlic, grated fresh ginger, thinly sliced red bell pepper, and frozen stir-fry vegetable mix to the same skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Return chicken to the skillet. Give the prepared sauce a quick whisk, then pour it over the chicken and vegetables. Cook, stirring, for 1-2 minutes until the sauce thickens and coats everything.
- Serve immediately over the cooked white rice.
Notes
You can customize the vegetables based on what you have on hand. Feel free to add a dash of sesame oil at the end for extra flavor.
