Garlic-Butter Shrimp and Orzo Bake

Instructions

  1. Preheat oven to 400 degrees F. In a 9x13 inch baking dish, combine 1 cup dried orzo pasta, halved cherry tomatoes, minced garlic, dried basil, 1 tsp salt, 1/2 tsp black pepper, 2 tablespoons olive oil, and 2 1/2 cups hot vegetable broth or water.
  2. Cover tightly with aluminum foil and bake for 15 minutes until orzo is almost tender and has absorbed most liquid.
  3. Remove dish from oven, stir in fresh baby spinach, and arrange 1 lb raw shrimp evenly over the top. Sprinkle crumbled feta cheese across the dish.
  4. Return uncovered dish to oven and bake for 10 minutes until shrimp turn pink and opaque with an internal temperature of 145 degrees F. Rest 5 minutes before serving.

Notes

Orzo holds up remarkably well when reheated.
