Instructions
- Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add ground chicken and cook, breaking it up with a spoon, until browned and cooked through, about 7-8 minutes. Drain any excess fat.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour in chicken broth, 1/4 teaspoon black pepper, and 1 teaspoon kosher salt. Bring to a gentle simmer, scraping up any browned bits from the bottom of the pan.
- Add the spiralized zucchini noodles to the skillet. Toss gently with the chicken mixture for 2-3 minutes, just until the zucchini is slightly softened but still has a bite. Avoid overcooking, as zucchini can become watery.
- Remove from heat. Stir in chopped fresh basil and halved cherry tomatoes.
- Drizzle with 2 tablespoons extra virgin olive oil before serving. Serve immediately.
Notes
You can use pre-spiralized zucchini noodles for an even faster meal. For extra richness, sprinkle with grated Parmesan cheese right before serving (though this would change the dairy-free status).
