  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until no longer pink, about 6-7 minutes. Drain any excess fat.
  2. Add the diced yellow onion, red bell pepper, and green bell pepper to the skillet with the cooked turkey. Cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes.
  3. Stir in 2 teaspoons garlic powder, 1 teaspoon dried oregano, 1 teaspoon ground cumin, 1/2 teaspoon mild chili powder, 1 1/2 teaspoons kosher salt, and 3/4 teaspoon black pepper. Cook for 1 minute more until fragrant.
  4. Pour in the can of diced tomatoes (undrained), 1 1/2 cups frozen shelled edamame, 1 cup frozen corn kernels, and 1 cup vegetable or chicken broth. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 5-7 minutes, allowing the flavors to meld and vegetables to heat through.
  5. While the skillet mixture simmers, prepare the microwavable brown rice pouches according to package directions.
  6. Once done, stir the cooked brown rice directly into the skillet with the turkey and vegetable mixture. Taste and adjust seasonings if necessary.
  7. Serve warm as a complete meal.
