Ingredients

- 5 ounce baby spinach (fresh)
- 24 ounce riced cauliflower (fresh)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add the diced yellow onion, garlic, and fresh ginger, sautéing for 3 minutes until fragrant and softened.
- Add the ground beef, breaking it apart with a wooden spoon. Stir in the garam masala, ground cumin, 1 teaspoon of the salt, and the black pepper. Cook for 7 to 8 minutes until browned and cooked through to an internal temperature of 160°F.
- Fold the fresh baby spinach into the beef mixture and stir for 1 to 2 minutes until just wilted. Remove the beef mixture from the pan and keep warm.
- In the same skillet, add the remaining 1 tablespoon of olive oil over medium heat. Add the riced cauliflower, ground turmeric, and the remaining 1/2 teaspoon of salt. Sauté for 4 to 5 minutes until tender-crisp.
- Divide the golden cauliflower rice into bowls, spoon the spiced beef over top, and garnish with fresh cilantro if desired.
