Instructions
- Prepare the chicken: Pat the chicken breast pieces dry with paper towels. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Set aside.
- Make the caramel: In a large, heavy-bottomed pot or Dutch oven, combine 1/2 cup granulated sugar and 1/4 cup water. Heat over medium-high heat without stirring until the sugar dissolves and the mixture begins to boil. Continue cooking, swirling the pan occasionally, until the syrup turns a deep amber color, about 5-8 minutes. Watch carefully to prevent burning.
- Sauté aromatics: Immediately add 1 tablespoon vegetable oil to the caramel (be cautious as it may splatter). Add minced garlic and julienned fresh ginger. Sauté for 1 minute until fragrant.
- Cook the chicken: Add the seasoned chicken breast to the pot. Stir to coat the chicken in the caramel and aromatics. Cook for 5 minutes, stirring occasionally, until the chicken is lightly seared on all sides.
- Simmer the sauce: Pour in 1/2 cup fish sauce and 1/4 cup chicken broth. Add the remaining 1 1/2 tablespoons black pepper. - Cook the rice: While the chicken simmers, prepare the jasmine rice. Rinse 3 cups uncooked jasmine rice under cold water until water runs clear. Combine rinsed rice and 6 cups water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until water is absorbed and rice is fluffy. Let stand, covered, for 5 minutes before fluffing with a fork.
- Stir-fry bok choy: In a large skillet or wok, heat the remaining 1 tablespoon vegetable oil over medium-high heat. Add the trimmed bok choy and stir-fry for 3-5 minutes until tender-crisp. Add 1 tablespoon soy sauce and 1 teaspoon sesame oil, toss to combine. Season with a pinch of salt if needed.
