  1. Preheat oven to 400°F. Toss 1 pound halved Brussels sprouts and 1 pound trimmed asparagus on a large rimmed baking sheet with 1/2 tablespoon of the olive oil, 1/2 teaspoon of the salt, and 1/4 teaspoon of the black pepper. Roast for 18 minutes until tender and caramelized.
  2. While vegetables roast, heat remaining 1/2 tablespoon olive oil in a 10-inch oven-safe skillet over medium heat. Add 1 package chopped turkey bacon and cook for 5 minutes until lightly browned. Stir in 4 cups fresh baby spinach until wilted, about 1 minute.
  3. In a mixing bowl, whisk together 8 large eggs, 1 cup liquid egg whites, 1 cup shredded mozzarella cheese, remaining 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Pour egg mixture over the bacon and spinach in the skillet.
  4. Transfer the skillet to the oven and bake for 14 to 16 minutes until the center is set and slightly puffed. Slice into 4 wedges and serve alongside the roasted asparagus and Brussels sprouts.
