Ingredients
- 8 eggs (large)
- 1 cup liquid egg whites
- 1 package turkey bacon (chopped)
- 1 cup shredded mozzarella cheese (part-skim)
- 4 cup baby spinach (fresh)
- 1 pound asparagus (trimmed and cut into 2-inch pieces)
- 1 pound Brussels sprouts (trimmed and halved)
- 1 tablespoon olive oil

Instructions
- Preheat oven to 400°F. Toss 1 pound halved Brussels sprouts and 1 pound trimmed asparagus on a large rimmed baking sheet with 1/2 tablespoon of the olive oil, 1/2 teaspoon of the salt, and 1/4 teaspoon of the black pepper. Roast for 18 minutes until tender and caramelized.
- While vegetables roast, heat remaining 1/2 tablespoon olive oil in a 10-inch oven-safe skillet over medium heat. Add 1 package chopped turkey bacon and cook for 5 minutes until lightly browned. Stir in 4 cups fresh baby spinach until wilted, about 1 minute.
- In a mixing bowl, whisk together 8 large eggs, 1 cup liquid egg whites, 1 cup shredded mozzarella cheese, remaining 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Pour egg mixture over the bacon and spinach in the skillet.
- Transfer the skillet to the oven and bake for 14 to 16 minutes until the center is set and slightly puffed. Slice into 4 wedges and serve alongside the roasted asparagus and Brussels sprouts.
