Fluffy Spinach and Feta Frittata

  1. Preheat oven to 375°F (190°C). In a large bowl, whisk together eggs, milk, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until light and frothy.
  2. Heat 1 tablespoon olive oil in an oven-safe, 10-inch non-stick skillet over medium heat. Add diced yellow onion and sauté until softened, about 3-5 minutes.
  3. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove skillet from heat.
  4. Pour the egg mixture over the spinach and onion in the skillet. Sprinkle crumbled feta cheese evenly over the top.
  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and lightly golden brown on top. A knife inserted into the center should come out clean.
  6. While the frittata bakes, prepare the side salad. In a medium bowl, combine mixed greens. Drizzle with 2 tablespoons extra virgin olive oil and 1 tablespoon red wine vinegar, toss gently to coat.
  7. Remove frittata from oven and let it rest for a few minutes before slicing into wedges. Serve with the simple green salad and sliced baguette.

Notes

Frittata is excellent served warm or at room temperature. It can be made ahead and stored in the refrigerator for up to 3 days.
