Instructions

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper.
  2. Prepare brown rice according to package directions while the oven preheats.
  3. Pat the salmon fillets dry. In a small bowl, combine olive oil, garlic powder, dried oregano, smoked paprika, salt, and black pepper. Rub this seasoning mixture evenly over the salmon fillets.
  4. On the prepared sheet pan, arrange the trimmed asparagus, sliced red bell pepper, and rinsed chickpeas. Drizzle lightly with a touch more olive oil (if desired) and season with a pinch of salt and pepper.
  5. Place the seasoned salmon fillets among the vegetables on the sheet pan.
  6. Roast for 15-20 minutes, or until the salmon is cooked through and flaky, and the vegetables are tender-crisp. Cooking time may vary based on salmon thickness.
  7. Serve the salmon and roasted vegetables immediately with the cooked brown rice.

Notes

Avoid overcooking the salmon to keep it moist and flaky. Any leftover salmon is delicious cold on a salad the next day.
