  1. In a medium saucepan, combine the uncooked jasmine rice and water. Bring to a boil over high heat, then reduce heat to low, cover with a tight-fitting lid, and simmer for 15 minutes until liquid is absorbed and rice is tender. Remove from heat and keep covered.
  2. Heat the olive oil in a large deep skillet or Dutch oven over medium-high heat. Add the yellow onion and garlic, sautéing for 2 to 3 minutes until softened and fragrant.
  3. Add the ground pork and ground black pepper to the skillet. Cook, breaking up the meat with a wooden spoon, for 6 to 8 minutes until thoroughly browned and cooked to an internal temperature of 160°F.
  4. Stir in the diced Yukon Gold potatoes, tomato sauce, reduced-sodium soy sauce, fish sauce, and low-sodium chicken broth. Bring to a gentle boil, then lower the heat to medium-low, cover, and simmer for 10 minutes until the potatoes are just fork-tender.
  5. Add the frozen mixed vegetables into the skillet. Simmer uncovered for 4 to 5 minutes, stirring occasionally, until the sauce is slightly reduced and the vegetables are heated through.
  6. Fluff the warm jasmine rice with a fork and portion evenly among bowls, topping generously with the savory pork and vegetable mixture.

Notes

Reheats cleanly in the microwave with a splash of water over the rice to restore moisture.
