Filipino Garlic Shrimp

  1. Combine the rinsed jasmine rice with 1 3/4 cups water and a pinch of salt in a small saucepan. Bring to a boil, cover with a tight lid, reduce heat to low, and simmer undisturbed for 15 minutes until tender. Remove from heat and let steam covered for 5 minutes.
  2. In a small bowl, whisk together the gluten-free tamari, white vinegar, brown sugar, black pepper, and 2 tablespoons of water.
  3. Heat half of the olive oil in a large nonstick skillet over medium-high heat. Add the sugar snap peas and sauté for 3 to 4 minutes until bright green and crisp-tender. Transfer the peas to a side dish.
  4. Add the remaining olive oil to the same skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant and lightly golden, being careful not to burn it.
  5. Add the shrimp, bay leaf, and the prepared vinegar-tamari mixture to the pan. Simmer gently for 4 to 5 minutes, turning the shrimp once, until the shrimp turn opaque pink, curl into loose C-shapes, and reach an internal temperature of 145°F, and the sauce slightly reduces.
  6. Discard the bay leaf. Fluff the jasmine rice with a fork. Plate each serving with 1/2 cup cooked jasmine rice, sautéed snap peas, and garlic shrimp spooned with its savory adobo pan sauce, garnished with sliced scallions.

Notes

Using low-sodium gluten-free tamari ensures the savory adobo pan sauce maintains balanced seasoning.
