Ingredients
- 2 pound ground beef (93/7 lean)
- 2 cup jasmine rice (uncooked)
- 3.5 cup water
- 1 tablespoon vegetable oil
- 1 yellow onion (medium, finely diced)
- 5 clove garlic (minced)
- 2 Roma tomatoes (medium, diced)
- 1 can tomato sauce (8 oz can)
- 0.25 cup soy sauce (low-sodium)
- 1 tablespoon fish sauce
- 2 carrots (medium, peeled, diced small)
- 1 red bell pepper (medium, diced)
- 1 cup frozen green peas
- 0.5 teaspoon black pepper (ground)
- 0.25 teaspoon salt
Instructions
- Combine jasmine rice, water, and salt in a medium pot. Bring to a rolling boil over high heat, cover with a tight lid, reduce heat to low, and cook undisturbed for 15 minutes. Remove from heat and keep covered for 5 minutes before fluffing with a fork.
- While rice cooks, heat vegetable oil in a large deep skillet or Dutch oven over medium heat.
- Add yellow onion, garlic, and Roma tomatoes. Sauté for 4 to 5 minutes until onions are soft and tomatoes break down into a fragrant paste.
- Add ground beef, breaking it apart with a wooden spoon. Cook for 6 to 8 minutes until thoroughly browned and reaching an internal temperature of 160°F.
- Stir in tomato sauce, soy sauce, fish sauce, black pepper, diced carrots, and red bell pepper.
- Reduce heat to medium-low, cover, and simmer for 10 minutes until carrots are tender-crisp.
- Stir in frozen green peas and simmer uncovered for 2 to 3 minutes until peas are bright green and heated through.
- Spoon warm jasmine rice into shallow bowls and ladle the savory beef giniling generously over the top.
Notes
Giniling develops even deeper savory flavors overnight in the refrigerator, making it ideal for next-day lunches and quick reheats.
