  1. Heat 1 tablespoon of olive oil in a large skillet or non-stick pan over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until fully browned, about 5-7 minutes. Drain any excess grease.
  2. While the pork cooks, prepare the quick-cook rice according to package directions, typically by combining 1 1/2 cups of quick-cook rice with 1 3/4 cups of chicken broth (or water) in a saucepan, bringing to a boil, then reducing heat, covering, and simmering for 5-7 minutes until liquid is absorbed.
  3. To the skillet with the pork, add the diced yellow onion and diced red bell pepper. Sauté for 3-5 minutes, until vegetables begin to soften.
  4. Stir in the minced garlic, chili powder, ground cumin, dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 1 minute more, stirring constantly, until fragrant.
  5. Add the rinsed and drained black beans and drained corn to the skillet. Stir to combine and heat through, about 2-3 minutes.
  6. Serve the sizzling pork and bean mixture over individual portions of the cooked quick-cook rice. Garnish with chopped fresh cilantro if desired.

Notes

Leftovers store well in an airtight container for up to 3 days. Reheat gently in the microwave or on the stovetop. For a touch of extra heat, add a pinch of red pepper flakes with the other spices.
