Ingredients
- 1 pound ground pork
- 1 tablespoon olive oil
- 1 yellow onion (medium, diced)
- 1 red bell pepper (diced)
- 3 clove garlic (minced)
- 1 tablespoon chili powder
- 2 teaspoon ground cumin
- 1 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 15 ounce black beans (rinsed and drained)
- 15 ounce corn (drained)
- 1.5 cup quick-cook rice
- 1.75 cup chicken broth
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet or non-stick pan over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until fully browned, about 5-7 minutes. Drain any excess grease.
- While the pork cooks, prepare the quick-cook rice according to package directions, typically by combining 1 1/2 cups of quick-cook rice with 1 3/4 cups of chicken broth (or water) in a saucepan, bringing to a boil, then reducing heat, covering, and simmering for 5-7 minutes until liquid is absorbed.
- To the skillet with the pork, add the diced yellow onion and diced red bell pepper. Sauté for 3-5 minutes, until vegetables begin to soften.
- Stir in the minced garlic, chili powder, ground cumin, dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 1 minute more, stirring constantly, until fragrant.
- Add the rinsed and drained black beans and drained corn to the skillet. Stir to combine and heat through, about 2-3 minutes.
- Serve the sizzling pork and bean mixture over individual portions of the cooked quick-cook rice. Garnish with chopped fresh cilantro if desired.
Notes
Leftovers store well in an airtight container for up to 3 days. Reheat gently in the microwave or on the stovetop. For a touch of extra heat, add a pinch of red pepper flakes with the other spices.
