  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the 1 pound lean ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
  2. Add the 1 medium yellow onion and 2 cloves garlic to the skillet with the beef. Cook for 3-4 minutes until the onion softens.
  3. Stir in the 1 ounce packet taco seasoning and 1/4 cup water. Mix well to coat the beef and onions.
  4. Add the 1 (14 1/2 ounce) can diced tomatoes (undrained), 1 (15 ounce) can black beans (rinsed and drained), and 1 (15 ounce) can corn (drained) to the skillet. Bring the mixture to a simmer and cook for 5-7 minutes, allowing the flavors to meld.
  5. While the skillet mixture simmers, prepare the 2 pouches microwaveable brown rice according to package directions.
  6. Remove the skillet from heat. Stir in the juice from 1 lime. If desired, stir in 1/4 cup fresh cilantro.
  7. Serve the Fiesta Ground Beef Skillet over the warm brown rice, alongside 1 (8 ounce) package shredded lettuce, 5 ounces tortilla chips, and 8 ounces salsa. Top with optional sour cream, shredded cheddar cheese, or sliced avocado, if desired.

Notes

Leftovers store well in an airtight container for up to 3 days. Reheat gently on the stovetop or in the microwave. For a vegetarian option, swap the ground beef for plant-based crumbles or extra black beans.
