  1. Heat 1/2 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set the beef aside.
  2. Add the remaining 1/2 tablespoon olive oil to the same skillet. Add 2 cloves minced garlic and red chilies, and sauté for 1 minute until fragrant.
  3. Stir in the thinly sliced red bell pepper and cook for 3-4 minutes until slightly softened but still crunchy.
  4. Return the cooked ground beef to the skillet. Add the fish sauce, low-sodium soy sauce, erythritol, and black pepper. Stir well to combine and cook for 1-2 minutes to allow the sauce thicken slightly.
  5. Remove the skillet from heat and stir in the fresh Thai basil leaves until just wilted. Set aside.
  6. For the zucchini noodles: In a separate pan or in the same skillet (wiped clean), heat a touch of olive oil over medium heat. Add 1 clove minced garlic and sauté for 30 seconds. Add the spiralized zucchini noodles and cook for 2-3 minutes, tossing frequently, until warmed through but still firm. Do not overcook.
  7. Divide the garlic zucchini noodles among two plates. Spoon the fiery Thai basil beef mixture over the zucchini noodles. Garnish with lime wedges, if desired, and serve immediately.

Notes

Adjust the number of chilies to control the spice level. You can use ground chicken or pork instead of beef for a different flavor profile.
