- 1.5 pound raw shrimp (peeled and deveined)
- 3 clove garlic (minced)
- 0.5 teaspoon red pepper flakes

- 0.5 cup fresh cilantro (chopped)

Instructions
- Start the rice: In a medium saucepan, combine uncooked white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Remove from heat and let stand, covered, for 5 minutes.
- While rice cooks, prepare the shrimp: Heat olive oil in a large skillet over medium-high heat. Add minced garlic and red pepper flakes; cook for 30 seconds until fragrant.
- Add shrimp to the skillet. Season with kosher salt and black pepper. Sauté, stirring occasionally, for 3-5 minutes, or until the shrimp are pink and cooked through. Be careful not to overcook.
- Fluff the cooked rice with a fork. Stir in the chopped fresh cilantro and fresh lime juice.
- Serve the fiery shrimp immediately alongside the cilantro lime rice.
Notes
Adjust the amount of red pepper flakes to your preferred spice level. Leftovers store well and can be reheated, though shrimp is best enjoyed freshly cooked for optimal texture.
