- 1 pound ground beef (lean)
- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 1 can diced tomatoes (undrained)
- 1.5 cup sweet potato (small-diced)
- 1 tablespoon Jamaican jerk seasoning
- 0.5 teaspoon red pepper flakes
- 0.5 teaspoon salt
- 0.25 cup fresh cilantro (chopped)
- 2 cup white rice (cooked)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and yellow onion, breaking up the beef with a spoon. Cook for 6-8 minutes, until beef is browned and onion is softened.
- Drain any excess fat from the skillet. Add minced garlic, diced tomatoes, small-diced sweet potato, Jamaican jerk seasoning, red pepper flakes, and salt. Stir to combine.
- Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until sweet potatoes are tender, stirring occasionally. While the hash simmers, prepare the cooked white rice.
- Serve the hash hot, garnished with fresh cilantro, alongside the white rice.
