Instructions
- Pat shrimp dry with paper towels. In a small bowl, whisk together low-sodium soy sauce, rice vinegar, keto-friendly sweetener, minced garlic, grated fresh ginger, and red pepper flakes to create the sauce.
- Heat olive oil in a large skillet or wok over high heat.
- Add broccoli florets to the hot pan and stir-fry for 3-4 minutes until tender-crisp. Add sliced red bell pepper and yellow onion, and stir-fry for another 2-3 minutes.
- Push vegetables to one side of the pan. Add shrimp to the other side and cook for 1-2 minutes per side until pink and opaque.
- Pour the prepared sauce over the shrimp and vegetables. Toss everything together to coat and cook for 1-2 minutes, allowing the sauce to slightly thicken.
- Serve immediately, garnished with fresh cilantro and a lime wedge. Enjoy as a standalone dish or over konjac noodles.
