Ingredients
- 0.75 cup jasmine rice (uncooked)
- 1 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 1 tablespoon cornstarch
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 1.5 tablespoon sesame oil
- 1 head broccoli (cut into florets)
- 2 clove garlic (minced)
- 1 fresh ginger (grated)
- 0.5 cup low-sodium soy sauce
- 2 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha sauce (or more, to taste)
- 1 green onion (sliced, for garnish)
Instructions
- Cook jasmine rice according to package directions. Keep warm.
- In a medium bowl, toss the cut chicken breast with cornstarch, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper until evenly coated.
- In a small bowl, whisk together the low-sodium soy sauce, brown sugar, rice vinegar, and sriracha sauce to make the stir-fry sauce.
- Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat. Add the broccoli florets and stir-fry for 3-5 minutes, until tender-crisp. Remove broccoli from the pan and set aside.
- Add the remaining 1/2 tablespoon sesame oil to the pan. Add the chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Push chicken to one side.
- Add the minced garlic and grated fresh ginger to the empty side of the pan and cook for 30 seconds until fragrant.
- Return the broccoli to the pan with the chicken, then pour the stir-fry sauce over everything. Stir to coat and cook for 1-2 minutes until the sauce thickens slightly.
- Serve the fiery chicken and broccoli stir-fry immediately over the warm jasmine rice. Garnish with sliced green onion if desired.
Notes
Adjust the sriracha to your preferred spice level. For added vegetables, consider adding sliced bell peppers or carrots to the stir-fry.
