Instructions
- Heat olive oil in a large skillet over medium-high heat for 1 minute. Add diced yellow onion and sliced bell peppers and cook, stirring occasionally, until softened, about 5-7 minutes.
- Add the Impossible Ground Beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess liquid if necessary.
- Stir in minced garlic, chili powder, paprika, cayenne pepper, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant. Add 1/2 cup water or vegetable broth, bringing to a simmer.
- While the beef mixture simmers, prepare the avocado crema: In a small food processor or with a fork, mash the avocado with the juice of 1 lime, 2 tablespoons water, and 1/8 teaspoon salt until smooth and creamy.
- Stir 2 tablespoons chopped fresh cilantro into the skillet. Remove from heat. Serve the beef and bell pepper mixture over shredded romaine lettuce, drizzled with the avocado crema and garnished with additional fresh cilantro.
