Instructions

- Add rinsed red lentils and 4 cups of low-sodium vegetable broth to the saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes until lentils are soft and creamy.
- While lentils cook, steam cauliflower florets in a steamer pot over boiling water for 6 to 7 minutes until fork-tender.
- Ladle the creamy spiced red lentils into bowls. Top each serving with steamed cauliflower and freshly diced avocado.
