Ingredients
- 1 pound ground beef (90% lean)
- 0.5 cup onion (chopped)
- 1 can whole corn (low-sodium, 15.2 ounce, drained)
- 4 tablespoon taco seasoning mix (dry)
- 2 cup brown rice (cooked)
- 0.5 cup cheese (grated)
- 0.5 cup mushrooms (sliced)
Instructions
- Cook ground beef and onion until onion juices are clear.
- Drain juice and fat from cooked ground beef and onions.
- Add whole corn, taco seasoning mix, and brown rice.
- Simmer for 10 minutes.
- Add grated cheese to top; cover and let set for 5 minutes.
