Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet (about 10-12 inches) over medium heat. Add the diced yellow onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for 1 minute more.
- Pour in the crushed tomatoes. Stir in the ground cumin, smoked paprika, chili flakes (if using), salt, and black pepper. Bring the sauce to a gentle simmer and cook for 5 minutes, allowing the flavors to deepen.
- Create 6 small wells in the tomato sauce using the back of a spoon. Carefully crack one large egg into each well. Season the eggs with a pinch more salt and pepper.
- Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the egg whites are set and the yolks are still slightly runny (or to your desired doneness).
- Garnish with chopped fresh parsley, if desired, and serve immediately with warm pita bread for dipping.
Notes
Adjust the chili flakes to your family's preferred spice level. For a softer yolk, bake closer to 10 minutes; for firmer, closer to 15.
