  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet (about 10-12 inches) over medium heat. Add the diced yellow onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for 1 minute more.
  3. Pour in the crushed tomatoes. Stir in the ground cumin, smoked paprika, chili flakes (if using), salt, and black pepper. Bring the sauce to a gentle simmer and cook for 5 minutes, allowing the flavors to deepen.
  4. Create 6 small wells in the tomato sauce using the back of a spoon. Carefully crack one large egg into each well. Season the eggs with a pinch more salt and pepper.
  5. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the egg whites are set and the yolks are still slightly runny (or to your desired doneness).
  6. Garnish with chopped fresh parsley, if desired, and serve immediately with warm pita bread for dipping.

Notes

Adjust the chili flakes to your family's preferred spice level. For a softer yolk, bake closer to 10 minutes; for firmer, closer to 15.
