  1. Cook the white rice according to package directions. Keep warm.
  2. Heat the vegetable oil in a medium non-stick skillet over medium heat. Add the diced yellow onion and red bell pepper. Cook for 3-4 minutes until softened.
  3. Add the minced garlic, rinsed canned black beans, ground cumin, and red pepper flakes. Cook for 2 minutes, stirring occasionally.
  4. Pour in the vegetable broth and soy sauce. Bring to a gentle simmer and cook for 1-2 minutes to allow the flavors to combine.
  5. Create a small well in the center of the mixture and crack the large egg directly into it. Season the egg lightly with a pinch of salt and pepper.
  6. Cover the skillet and cook for 3-5 minutes, or until the egg white is set and the yolk is cooked to your desired consistency.
  7. Serve the black bean and egg skillet immediately alongside the cooked white rice. Garnish with fresh cilantro.
