Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef (80/20 lean)
- 2 garlic cloves (minced)
- 3 cup broccoli florets
- 0.5 cup water
- 0.25 cup soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon cornstarch
- 1 cup white rice (microwaveable)
Instructions
- Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add 1 pound ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
- Stir in 2 minced garlic cloves and cook for 1 minute until fragrant.
- Add 3 cups broccoli florets and 1/4 cup water to the skillet. Cover and steam for 3-5 minutes, until broccoli is tender-crisp.
- In a small bowl, whisk together 1/4 cup soy sauce, 1 tablespoon brown sugar, and 1 teaspoon cornstarch. Pour the sauce over the beef and broccoli. Stir until the sauce thickens and coats the ingredients, about 2-3 minutes.
- While the stir-fry cooks, prepare 1 cup microwaveable white rice according to package directions. Serve the beef and broccoli stir-fry over the rice.
Notes
For a bit of heat, add a pinch of red pepper flakes with the garlic.
