Instructions
- Preheat oven to 400°F (200°C). Prepare the 1 pound fresh okra by washing, drying thoroughly, and trimming the ends. Slice each okra pod in half lengthwise.
- In a large bowl, toss the halved okra with 2 tablespoons vegetable oil, 1 teaspoon ground turmeric, 1 teaspoon ground coriander, 1/2 teaspoon ground cumin, 1/2 teaspoon red chili powder, and 1 teaspoon salt until evenly coated.
- Spread the seasoned okra in a single layer on a large baking sheet. Roast for 20-25 minutes, flipping halfway through, until crispy and lightly browned. Avoid overcrowding the pan to ensure crispiness.
- While the okra roasts, prepare the turmeric basmati rice. Rinse 1 cup basmati rice under cold water until clear. In a saucepan, combine rinsed rice, 2 cups water, 1/4 teaspoon ground turmeric, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Let stand covered for 5 minutes, then fluff with a fork.
- Warm 3 pieces roti bread according to package directions.
- Serve the dry-roasted okra pods immediately with the turmeric basmati rice and warm roti. A squeeze of fresh lime juice can brighten the flavors.
Notes
Ensure the okra is very dry before tossing with oil and spices to prevent sliminess during roasting. Adjust chili powder to your preferred spice level.
