Ingredients
- 2 tablespoon dried egg mix
- 0.25 cup water
- 0.25 pound ground beef
- 0.5 onion (finely chopped)
- 0.5 green bell pepper (chopped)
- 2 tablespoon vegetable oil
- 8 ounce peas (reduced-sodium, drained)
- 8 ounce kidney beans (low-sodium, drained)
- 4 cup rice (cooked, cold)
- 0.25 teaspoon black pepper
Instructions
- In a small bowl, combine dried egg mix and water.
- Mix well and set aside.
- In a large skillet, cook ground beef, onion, and green pepper in vegetable oil over medium heat for about 10 minutes.
- Add dried egg mix to skillet.
- Scramble eggs over medium heat for about 5 minutes.
- Add peas and beans to skillet.
- Cook for about 5 minutes.
- Add rice and black pepper to skillet.
- Stir to break up any clumps of rice.
- Cook for about 5 minutes.
- Serve hot.
