Ingredients
- 2 salmon fillets (6-ounce skin-on fillets)
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- 0.5 pound green beans (trimmed)
- 0.75 cup couscous (dry)
- 1 cup low-sodium chicken broth
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- In a small saucepan, bring low-sodium chicken broth, 1/4 teaspoon of the salt, and 1/8 teaspoon of the black pepper to a rolling boil. Stir in dry couscous, immediately cover with a tight-fitting lid, remove from heat, and let stand 5 minutes, then fluff with a fork.
- In a small bowl, stir together Dijon mustard and honey until smooth.
- Season salmon fillets on both sides with the remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Heat olive oil in a large nonstick skillet over medium-high heat. Add salmon skin-side down and sear for 4 minutes. Flip fillets, brush the tops generously with the Dijon-honey mixture, and cook for another 3 to 4 minutes until the salmon flakes easily with a fork and reaches 145 degrees F. Transfer salmon to plates.
- In the same skillet, add green beans and 3 tablespoons of water. Cover and steam over medium heat for 4 minutes until bright green and tender-crisp.
- Serve each glazed salmon fillet alongside a portion of fluffy couscous and tender steamed green beans.
