Instructions
- Preheat oven to 400°F (200°C). In a large baking dish, combine the cubed chicken breast, cauliflower florets, green beans, diced yellow onion, minced garlic, and grated ginger.
- In a small bowl, whisk together the ground turmeric, ground cumin, low-sodium chicken broth, olive oil, salt, and black pepper. Pour the mixture over the chicken and vegetables in the baking dish, ensuring everything is evenly coated. Stir in the chia seeds.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender. Stir halfway through cooking.
