  1. Heat olive oil in a large skillet over medium heat. Add chopped yellow onion and cook for 3-4 minutes until softened.
  2. Add ground beef to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Stir in minced garlic, curry powder, 1/4 teaspoon ground turmeric, 1/4 teaspoon salt, and black pepper. Cook for 1 minute until fragrant.
  4. Add chopped dried apricots, apple cider vinegar, and grated apple to the beef mixture. Cook for 3-5 minutes, stirring occasionally, until apple softens slightly and flavors meld.
  5. While beef mixture cooks, combine riced cauliflower, chicken broth, and remaining 1/4 teaspoon salt and 1/4 teaspoon ground turmeric in a separate microwave-safe bowl. Cover and microwave on high for 3-5 minutes, or cook in a pot on the stovetop, until tender. Fluff with a fork.
  6. Serve the curried beef mixture over the turmeric cauliflower rice.

Notes

To speed up the cauliflower rice, you can buy pre-riced cauliflower. This dish stores and reheats well, making it excellent for meal prepping.
