- 0.5 cup cucumber (finely diced)
- 0.25 cup Roma tomato (finely diced)
- 0.25 cup fresh mint (chopped)
- 0.25 cup lemon juice (freshly squeezed)
Instructions
- Preheat oven to 400°F (200°C). If using wooden skewers, soak them in water for at least 20 minutes.
- In a large bowl, combine ground turkey, red onion, 2 tablespoons fresh parsley, minced garlic, ground cumin, ground coriander, smoked paprika, cayenne pepper (if using), kosher salt, and black pepper. Mix gently until just combined. Form the mixture into small, elongated meatballs (kofta shape) and thread onto skewers.
- Toss sliced zucchini with 1 tablespoon olive oil, a pinch of salt, and pepper. Arrange zucchini on a baking sheet.
- Place kofta skewers on a separate baking sheet or alongside zucchini if there's enough space. Bake for 15-20 minutes, or until turkey is cooked through and lightly browned, flipping halfway. Roast zucchini for the same duration until tender-crisp.
- While kofta and zucchini cook, prepare the cauliflower tabbouleh: In a medium bowl, combine riced cauliflower, diced cucumber, diced Roma tomato, chopped fresh mint, and lemon juice. Toss gently to combine. Season with a small pinch of salt and pepper to taste.

Notes
Ensure the ground turkey mixture isn't overmixed, as this can lead to tough kofta. For a richer flavor, you can pan-fry the kofta instead of baking.
