Cumin-Spiced Turkey and Black Bean Casserole

Instructions

  1. Preheat oven to 375°F and spray a 9x13-inch baking dish with cooking spray.
  2. In a large skillet over medium heat, cook ground turkey, yellow onion, red bell pepper, and garlic for 8 to 10 minutes until the meat is fully browned and reaches 165°F.
  3. Stir in ground cumin, chili powder, salt, black beans, canned sweet corn, and half of the jar of salsa. Cook for 2 minutes until combined and warm.
  4. Spread 2 tablespoons of the remaining salsa over the bottom of the prepared baking dish. Layer 6 corn tortillas over the bottom, cutting or overlapping slightly as needed.
  5. Spread half of the warm turkey-bean filling over the tortillas, then sprinkle with 1 cup of Monterey Jack cheese.
  6. Top with the remaining 6 corn tortillas, spread the rest of the salsa over top, add the remaining meat filling, and finish with the final 1 cup of Monterey Jack cheese.
  7. Bake uncovered for 22 to 25 minutes until the cheese is completely melted and bubbly around the edges. Let rest 5 minutes before slicing.

Notes

Reheats cleanly in the microwave or covered in a 350°F oven until warmed through.
