  1. In a bowl, mix ground cumin, smoked paprika, and salt. Coat pork tenderloin medallions evenly with the spice mixture.
  2. Heat vegetable oil in a skillet over medium-high heat. Add sliced red bell pepper and cook for 3 minutes until crisp-tender; remove from skillet.
  3. Add pork medallions to the skillet and sear for 3-4 minutes per side until cooked through.
  4. Heat black beans in a small saucepan over medium heat for 3 minutes.
  5. Serve pork tenderloin medallions alongside bell peppers, black beans, and warm corn tortillas.

Notes

Pork medallions reheat quickly in a skillet or microwave without drying out.
