Ingredients
- 3 pound ground turkey (93% lean)
- 2 tablespoon olive oil (extra virgin)
- 2 yellow onions (medium, diced)
- 3 bell peppers (large, diced)
- 24 ounce riced cauliflower (thawed)
- 2 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 2 tablespoon lime juice (freshly squeezed)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat the olive oil in a very large skillet or Dutch oven over medium-high heat.
- Add the diced yellow onions and bell peppers to the skillet and cook for 4 to 5 minutes until softened.
- Add the ground turkey, breaking it up with a wooden spoon, and cook for 6 to 8 minutes until no longer pink and cooked through to an internal temperature of 165 degrees Fahrenheit.
- Stir in the chili powder, ground cumin, smoked paprika, garlic powder, onion powder, and salt, coating the meat and vegetables thoroughly.
- Fold in the thawed riced cauliflower and cook for 3 to 4 minutes until thoroughly heated and excess moisture evaporates.
- Remove from heat, drizzle with fresh lime juice, garnish with chopped fresh cilantro if desired, and serve warm.
