Ingredients
- 2 pound ground beef (90% lean)

- 2 avocados (medium, sliced)

- 2 tablespoon lime juice (freshly squeezed)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 7 to 8 minutes, breaking it into crumbles until browned and internal temperature reaches 160°F. Drain any excess fat.
- Add the ground cumin, chili powder, dried oregano, 1 teaspoon of the kosher salt, and black pepper to the beef. Stir in 1/4 cup water and simmer for 3 minutes until fragrant and saucy.
- In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Sauté the diced green bell peppers for 5 minutes until tender-crisp.
- Microwave or heat the frozen riced cauliflower according to package instructions, then toss with lime juice and the remaining 1/2 teaspoon kosher salt.
- Assemble bowls by dividing the seasoned cauliflower rice, spiced beef, sautéed bell peppers, and sliced avocado evenly. Garnish with fresh cilantro.
