Instructions
- Pat the pork tenderloin medallions dry. In a small bowl, combine 1 teaspoon ground cumin, 1/2 teaspoon paprika, 1/4 teaspoon ground ginger, 1/4 teaspoon cinnamon, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Rub the spice mixture evenly over both sides of the pork medallions.
- In a small heatproof bowl, combine 1/2 cup instant couscous with 1 cup boiling water. Cover and let stand for 5 minutes, then fluff with a fork.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the seasoned pork medallions and sear for 3-4 minutes per side, until golden brown and cooked through (internal temperature reaches 145°F).
- While pork is cooking, warm the rinsed and drained chickpeas in a small saucepan or microwave. Season with a pinch of salt and remaining 1/4 teaspoon black pepper.
- Remove pork from skillet and let rest for a few minutes. Serve the Cumin-Kissed Pork Medallions with the fluffed couscous and seasoned chickpeas. Garnish with chopped fresh parsley.
Notes
Adjust the spices to your preference. If you like a little heat, add a pinch of cayenne pepper to the spice rub.
