Ingredients
- 1.25 pound salmon fillet (skin-on, cut into 4 portions)
- 1 cup basmati rice (uncooked, rinsed)
- 1 can light coconut milk (13.5 oz can)
- 5 ounce baby spinach (fresh)
- 1.5 tablespoon avocado oil
- 1 teaspoon ground cumin
- 0.5 teaspoon ground turmeric
- 0.5 teaspoon ground coriander
- 1 teaspoon salt
- 1 lime (medium, cut into wedges)
Instructions
- In a medium saucepan, combine the rinsed basmati rice, the entire can of light coconut milk, 1/2 cup water, and 1/2 teaspoon of the salt. Bring to a boil over high heat, cover with a tight-fitting lid, reduce heat to low, and cook for 14 minutes until all liquid is absorbed.
- In a small dish, mix the ground cumin, ground turmeric, ground coriander, and remaining 1/2 teaspoon salt. Pat the salmon fillets dry and rub the spice mixture evenly over the flesh sides.
- Heat 1 tablespoon of the avocado oil in a large nonstick skillet over medium-high heat. Add salmon skin-side down and cook 4 minutes, then gently flip and cook 3 to 4 minutes more until salmon flakes easily with a fork and registers 145°F.
- Transfer the salmon to a warm plate. In the same skillet over medium heat, add the remaining 1/2 tablespoon avocado oil and fresh baby spinach; stir for 1 minute just until wilted.
- Fluff the coconut basmati rice with a fork and serve topped with the spiced salmon, wilted spinach, and fresh lime wedges.
Notes
Salmon is best eaten fresh; reheat leftover portions gently on low heat with a splash of water so it stays moist.
