Instructions
- In a medium bowl, combine the chicken breast cubes with 2 cloves of minced garlic, 1 tablespoon of fresh lime juice, 1/2 tablespoon of olive oil, 1/4 teaspoon of ground cumin, 1/4 teaspoon of kosher salt, and 1/8 teaspoon of black pepper. Stir to coat and let marinate while preparing other components, about 5-10 minutes.
- Cook the white rice according to package directions. Typically, combine 1 cup of uncooked white rice with 2 cups of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until water is absorbed and rice is tender. Fluff with a fork.
- While the rice cooks, heat the remaining 1/2 tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated chicken to the skillet and cook for 6-8 minutes, stirring occasionally, until cooked through and lightly browned.
