Crusted Rainbow Trout with Sweet Potato Medallions

  1. Preheat the oven to 400 degrees F and line a large rimmed sheet pan with parchment paper.
  2. Toss the sweet potato rounds with 1 tablespoon of the avocado oil, 1/4 teaspoon of the salt, and 1/4 teaspoon of the black pepper, then spread them in a single layer on one side of the sheet pan.
  3. Toss the zucchini rounds with 1/2 tablespoon of the avocado oil, 1/8 teaspoon of the salt, and 1/8 teaspoon of the black pepper, and arrange them in the center of the pan.
  4. Roast the vegetables in the oven for 10 minutes.
  5. Remove the pan briefly, place the rainbow trout fillets on the empty section, drizzle with the remaining 1/2 tablespoon of avocado oil, and season with the ground bay leaf, remaining 1/8 teaspoon of salt, and remaining 1/8 teaspoon of black pepper.
  6. Return the sheet pan to the oven and bake for 10 minutes until the trout flakes cleanly with a fork at an internal temperature of 145 degrees F and sweet potatoes are tender.
  7. Garnish with the chopped fresh flat-leaf parsley and serve immediately.

Notes

Slicing the sweet potatoes thinly ensures they roast quickly and finish at the same time as the delicate trout.
