Instructions

  1. Place the cubed extra-firm tofu in a medium bowl, sprinkle with 2 tablespoons cornstarch, and gently toss until evenly coated.
  2. In a small bowl, whisk together 1/4 cup gluten-free tamari, 1 tablespoon maple syrup, 1 tablespoon grated fresh ginger, and 1/2 teaspoon garlic powder.
  3. Heat 2 tablespoons toasted sesame oil in a large non-stick skillet over medium-high heat. Add the coated tofu cubes in a single layer and cook for 8 minutes, turning occasionally until golden brown and crispy on all sides. Transfer tofu to a plate.
  4. In the same skillet, add the remaining 1 tablespoon toasted sesame oil and the halved baby bok choy cut-side down. Sauté for 3 to 4 minutes until greens are tender-crisp and bright green.
  5. Return the crispy tofu to the skillet and pour in the tamari-ginger sauce. Toss everything together for 1 minute until the sauce bubbles and glazes the tofu and bok choy evenly.
  6. Heat the 2 pouches of pre-cooked jasmine rice in the microwave according to package directions for 90 seconds.
  7. Divide warm jasmine rice among plates, top with glazed tofu and baby bok choy, and garnish with toasted sesame seeds.

Notes

Pressing the tofu thoroughly removes excess moisture, ensuring an extra crisp crust in the pan.
