  1. Pat the chicken thighs dry with paper towels. In a medium bowl, toss the chicken thighs with olive oil, 1 teaspoon of the dried oregano, dried thyme, 1 teaspoon of the garlic powder, 1/2 teaspoon of the kosher salt, and 1/4 teaspoon of the black pepper. Squeeze the juice from half of the lemon over the chicken and mix well.
  2. Heat a large skillet over medium-high heat. Add the seasoned chicken thighs and cook for 6-8 minutes per side, until golden brown and cooked through (internal temperature reaches 165°F). Remove from skillet and set aside.
  3. While chicken cooks, prepare the mashed potatoes. In a medium saucepan, combine the milk, 1 tablespoon of butter, 1 teaspoon of the garlic powder, 1/2 teaspoon of the kosher salt, and 1/4 teaspoon of the black pepper. Bring to a gentle boil over medium heat. Remove from heat and stir in the instant mashed potato flakes until smooth and fluffy.
  4. Place the frozen green beans in a microwave-safe dish with 2 tablespoons of water. Cover and microwave on high for 5-7 minutes, or until tender-crisp. Alternatively, steam them on the stovetop. Drain any excess water. Toss with the remaining 2 tablespoons of butter, and a pinch of salt and pepper.
  5. Serve the crispy lemon-herb chicken thighs immediately with the garlic mashed potatoes, steamed green beans, and lemon wedges for squeezing over the chicken.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or a skillet.
