Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound lean ground beef and 1/2 chopped yellow onion. Cook, breaking up the beef with a spoon, until beef is browned and onion is softened, about 6-8 minutes. Drain any excess fat.
  2. Stir in 1 clove minced garlic, 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
  3. Stir in 1 can rinsed and drained black beans. Reduce heat to medium-low and simmer for 5-7 minutes, allowing flavors to meld. Lightly warm the 8 tostada shells in the microwave or a dry skillet for 30 seconds to 1 minute each, to make them slightly more pliable.
  4. Assemble the tostadas: Spread a layer of the beef and bean mixture onto each warmed tostada shell. Top with 2 cups shredded lettuce, 1 cup salsa, and 1/2 cup guacamole. If desired, add 1/2 cup sour cream and 1/4 cup chopped fresh cilantro.
  5. Serve immediately.

Notes

For an even quicker meal, use pre-seasoned ground beef or taco seasoning packets. Tostadas are best enjoyed immediately to maintain crispness.
