- 0.5 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 0.5 pound ground pork
- 1 teaspoon smoked paprika
- 0.5 teaspoon ground cumin
- 0.25 teaspoon dried oregano
- 0.5 cup canned diced tomatoes (undrained)
- 0.25 cup chicken broth
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 2 piece pita bread
- 0.5 cup cucumber (chopped)
- 0.25 cup sour cream
- 1 tablespoon fresh parsley (chopped)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1/2 diced yellow onion and cook until softened, about 3 minutes.
- Add 2 cloves minced garlic and cook for 1 minute until fragrant.
- Add 1/2 pound ground pork, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Stir in 1 teaspoon smoked paprika, 1/2 teaspoon ground cumin, and 1/4 teaspoon dried oregano. Cook for 1 minute.
- Add 1/2 cup canned diced tomatoes and 1/4 cup chicken broth. Bring to a simmer and cook for 5 minutes, allowing sauce to thicken. Season with salt and black pepper to taste.
- While the pork simmers, warm 2 pieces pita bread according to package directions or quickly toast them in a dry skillet. In a small bowl, combine 1/2 cup chopped cucumber and 1/4 cup sour cream. Add fresh dill or parsley if using. Season the cucumber salad with a pinch of salt.
- Serve the Balkan pork skillet with warm pita bread and the cucumber-sour cream salad.
Notes
For extra zest in the cucumber salad, add a squeeze of lemon juice.
