Crispy Balkan Pork Skillet

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1/2 diced yellow onion and cook until softened, about 3 minutes.
  2. Add 2 cloves minced garlic and cook for 1 minute until fragrant.
  3. Add 1/2 pound ground pork, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  4. Stir in 1 teaspoon smoked paprika, 1/2 teaspoon ground cumin, and 1/4 teaspoon dried oregano. Cook for 1 minute.
  5. Add 1/2 cup canned diced tomatoes and 1/4 cup chicken broth. Bring to a simmer and cook for 5 minutes, allowing sauce to thicken. Season with salt and black pepper to taste.
  6. While the pork simmers, warm 2 pieces pita bread according to package directions or quickly toast them in a dry skillet. In a small bowl, combine 1/2 cup chopped cucumber and 1/4 cup sour cream. Add fresh dill or parsley if using. Season the cucumber salad with a pinch of salt.
  7. Serve the Balkan pork skillet with warm pita bread and the cucumber-sour cream salad.

Notes

For extra zest in the cucumber salad, add a squeeze of lemon juice.
